An exceptional antique Fino, this fresh and delicate sherry is aged for nine years in oak barrels.
It is a bright gold sherry with the taste of hazel nuts, oak, olives, and salt.
It is drawn from a single solera and bottled without blending, clarification, or other treatments which could affect the original aroma and colour.
Made from Palomino Fino grapes (100%) by Fernando de Castilla, it is fortified to 15% after an initial pressing and fermentation in stainless steel vats. The sherry is aged biologically in oak barrels in the traditional solera and criaderas system. It is then fortified a second time to 17% before bottling.
Pair this sherry with sausages, olives, fish, and shellfish. Serve between 5C and 8C.
