This is an exceptional dry sherry, an antique, auburn Oloroso with the aroma of nuts and orange peel.
The sherry, made from Palomino Fino grapes (100%) by Fernando de Castilla, is drawn from a single solera and bottled without blending, clarification, or other treatments which could affect the original aroma and colour.
The grapes are pressed and fermented in stainless steel vats, then fortified to 20%. They undergo oxidative ageing in oak barrels in the traditional solera and criadera system and the sherry is aged in barrels for 20 years.
It is ideal when paired with meats, cheeses, game, mushrooms, and stews. Serve between 12C and 16C.
