A sweet wine with a spicy raisin taste, this 100% Pedro Ximénez sherry from Fernando de Castilla is made using grapes dried in the sun on straw mats for 10 to 12 days.
The grapes are pressed and begin to ferment and wine alcohol is added at the beginning of the final graduation process at 15% alcohol content. As it does not complete its fermentation, many of the grape sugars in this wine pass into the traditional solera and criaderas system.
It is aged in barrels for 30 years to create a dark mahogany sherry with the aroma of dried fruits. It has a sweet and velvety taste, ideal for pairing with strong cheeses, chocolate, and vanilla ice cream. Serve between 12C and 16C,
