Description
A fine wine made by Luis Pérez solely from Petit Verdot grapes (100%) in a low-production vineyard.
The grapes are protected by being hand-harvested at night in boxes weighing no more than 15kg. They are soaked at 5C with carbon pellets before controlled fermentation for 18 days and ageing takes place in French oak barrels. It is ready to drink after one year of bottle ageing.
Its deep, cherry-red colour, and aromas of berries, stone, truffle, and ink are combined with a powerful and complex taste.
This mature red is best paired with cured ewe’s and goat’s cheese, wood-roasted lamb and kid, casseroles. and stuffed pork. It should be served at 17C.
