An intense, powerful wine made from 40% Petit Verdot, 30% Merlot, and 30% Syrah grapes by Luis Pérez.
The grapes are grown in a low production vineyard, hand-harvested at night, and packed in boxes weighing no more than 15kg to protect them. Each variety is handled separately in stainless steel vats before a controlled fermentation and ageing for 12 months in French oak barrels. The wine is neither filtered nor clarified and is ready to drink after one year of bottle-ageing.
The wine has a cherry-red colour and it is vivid and bright. There is a very intense nose with aromas of cherries in liquor, spices, aromatic herbs, cocoa, graphite, and ink. It is strong and powerful in the mouth, with hints of chocolate.
Pair this wine with dried fruits and nuts, game, stews, rice dishes, semi-firm cheeses, and chocolate. Serve at 17C.
