Spanish Meatballs (Albondigas)

A very popular dish throughout Andalusia, the word itself – Albondiga – derives from an Arabic word “al-bunduga” which means ball, that is quite cheap and easy to make. They were usually made with pork and bread, nowadays the bread content is less and they can be made with beef or more popularly with a 50-50 pork and beef mix. The sauce is either a rich homemade tomato sauce or the one explained here, accompanied by French fries or plain, boiled rice. I prefer the tomato sauce with rice and this carrot, onion and Oloroso sauce with French fries.
